Cooking dough
- Pour pre-sifted flour (400 grams) into a bowl. Add a bag (7-10 grams) of high-speed yeast to the flour. Add sugar (2 teaspoons) and salt (1 teaspoon). Pour olive oil (a tablespoon) into the flour and add about a glass of water. Knead the dough with a spoon and then with your hands.
- Sprinkle the surface of the table with flour, remove the dough from the bowl and knead it well with your hands for 10-15 minutes until completely homogeneous. The dough should be very soft. Lubricate the bowl with olive oil (1-1, 5 tablespoons) and transfer the dough into it so that it rises. To do this, cover the bowl with a towel or cling film and place in a warm place for 1 hour. The prepared dough is enough for 2 round pizzas or a large rectangular one.
Prepare the filling
- Clean raw king prawns: break off your head (throw it away), remove the carapace from the shrimp (it will come in handy, put it in a bowl), and also put the shrimp meat in a separate bowl.
- Put a frying pan on the fire and heat it. Add olive oil (2-3 tablespoons) to the pan and put shrimp shells on it. Stew shells in a pan, stirring occasionally. This is done so that the shells give their taste, smell and color to olive oil; so we get shrimp oil.
- While the shells are languishing in a pan, clean the shrimp meat: open the meat along the side and remove the entrails. Wash peeled shrimp in cold water. Once the shells have become crispy and dry, remove them from the pan and put them in a sieve so that all the butter is glass on a plate. Peel the garlic (3 cloves) and chop it into thin plates. Pour the resulting shrimp oil into a pan, put it on a fire and fry the garlic in it until golden. Using a sieve, let the olive-shrimp-garlic oil drain again, and put the garlic in a separate bowl.
- With the resulting oil (1-2 tablespoons), mix Philadelphia cheese (80-100 grams) and grind well.
Collect pizza
- Mash the dough and divide it into 2 parts. Form the dough into a ball and roll it out using a rolling pin into a circle 5-6 mm thick.
- Transfer the circle to a baking sheet greased with olive oil, or lay it on a shovel if you bake pizza in a special oven. Spread evenly on the dough, leaving small edges (about 8-10 mm), prepared base: Philadelphia cheese with shrimp and garlic oil. Tomato sauce in pizza with shrimp is better not to use, so as not to spoil the delicate delicate taste.
- On top of a tender base, lay the plates of roasted garlic.
- Shrimp (15-18 pieces) put whole or cut into pieces.
- Tear the mozzarella (100-150 grams) with your hands and put them on pizza. Grate Parmesan Cheese and sprinkle pizza on top. To taste, you can sprinkle pizza with freshly ground pepper, dried basil and rosemary.Sprinkle the edges of the dough with olive oil and send the pizza to the oven preheated to 200 degrees for 15-20 minutes.
- If you bake pizza in a special oven, then 5 minutes is enough.
Decoration methods and presentation options
Shrimp pizza is served hot; reheating is best avoided. Pizza is cut into 6-8 parts with a sharp knife or a special roller knife. Ready-made pizza with shrimp can be decorated with fresh basil leaves or arugula.
