Step cooking
- All the spinach in the amount of 400 grams of mine under the tap, cut the roots.
- Pour water into a medium-sized pot, put it on a fire, bring it to a boil, lower the washed spinach there for exactly two minutes, no more. Two minutes later, using a slotted spoon, we remove the spinach from the pan, place it separately in a bowl, let it cool.
- While the spinach cools, let’s take care of the walnuts. 200 grams of peeled nuts are passed through an electric meat grinder.
- Peel four cloves of garlic from the peel, wash it under the tap and pass through a meat grinder. The fourth part of a large pod of red hot pepper is also passed through a meat grinder.
- One large bunch of fresh cilantro washes under the tap, cut off the roots, pass it through a meat grinder. Leave chopped nuts, garlic and fresh cilantro in one bowl.
- Press the cooled spinach slightly with your hands to remove excess moisture, and pass through a meat grinder into a separate container. Spinach gives a lot of juice.
- Using a tablespoon, select the spinach and place it on the nuts, garlic and cilantro, trying to have less juice.
- Add to the ingredients an incomplete teaspoon of salt, two teaspoons of ground cilantro, two teaspoons of uzo-suneli. Here we pour one tablespoon of wine vinegar, which can be replaced with balsamic. Thoroughly mix the components with a tablespoon until the mixture is as homogeneous as possible.
- Now you need to determine the consistency of the resulting product. If the phali turned out to be too dry, you can add the juice that remained after the spinach passed through the meat grinder. Be sure to taste the phali, if necessary, guided by our preferences, we can add salt, wine vinegar and be sure to add one teaspoon of granulated sugar. Thoroughly mix the phali again, put it in a salad bowl, it can be served.
Decoration options
- Serving a Georgian dish on a table in a salad bowl, you can decorate it on top with onion rings, put cilantro leaves and pomegranate seeds around the salad bowl.
- When serving, you can form balls, put them on a plate, put an onion ring and a slice of red hot pepper on top like a hat.
- Georgian phali can be made not only from spinach, but also from green onions, cauliflower, red beans. Therefore, you can cook multi-colored balls of phali of various kinds, garnish with pomegranate seeds, lemon slices, and herbs. This will give the dish an appetizing look.
