Step cooking
- First of all, set the oven to heat up to 180 degrees. We take 80 g of butter or margarine and put in a glass bowl. Melt in a water bath or put in a microwave for 1-2 minutes until a uniform consistency is formed. Then let it cool to room temperature.
- Drive two eggs into a deep bowl. Then we add 0.5 cups of sugar there and stir everything with a whisk until a homogeneous mass is obtained.
- After that, add a pinch of salt and pour the melted butter into the eggs and sugar. Mix.
- We extinguish half a spoonful of soda with vinegar and add to the resulting mixture. Soda is quenched with vinegar so that its taste is not noticeable in the finished dish.
- We take 2-2.5 cups of flour and sift so that there are no lumps in it. Pour the sifted flour in parts into a bowl with ingredients, stirring with a whisk each time.
- When the consistency of the dough becomes too tight, continue to knead it with your hands. If everything is done correctly, you will get a gentle elastic dough that should not stick to your hands.
- You divide the finished dough into two unequal parts (one should be smaller than the other). We put a small part on a plate and send it to the freezer for 10-15 minutes.
- We cover the baking sheet with parchment paper, which we cut out about 30-35 cm in size. We spread the remaining piece of dough on it. With dry hands we try to stretch the dough so that it completely covers the parchment.
- Sprinkle dough on top with 30 g of zest of grapefruit or orange. You can skip this step if you are allergic or you just don't like the smell of citrus.
- Next, take a glass of any jam that you like, and spread it with a thin layer on the dough.
- We take out the second piece of dough from the freezer, and using a coarse grater, rub it so that the chips evenly cover the layer of dough with jam.
- We send the baking sheet with the dough into the oven already preheated to 180 degrees for 25-30 minutes.
- After baking, we take out the baking sheet, cool the cookies a little and cut it into equal-sized servings. You can cut it into squares, rhombuses or rectangles, as you like. Now the cookie is ready to eat!
The advantage of such cookies is that you can use absolutely any kind of jam, thereby completely changing the taste of the resulting baking, which is ideal for tea with lemon or coffee.
