Step cooking
Cooking dough
- We take in advance the butter (250 g) from the refrigerator so that it softens.
- Put 350 g of cottage cheese in a deep bowl to knead the ingredients. If you have cottage cheese with liquid, squeeze it through a sieve and cheesecloth, it should be dry. Knead the cottage cheese with a fork.
- Cut the softened butter into cubes, send it to the cottage cheese.
- Mix it with a fork with cottage cheese until smooth. Instead of a fork, you can use a mixer or a blender with a whisk.
- Add vanilla to the cottage cheese to taste (it can be an extract, vanilla sugar, etc.), mix.
- Sift through a sieve 400 g of flour with 1 tsp. baking powder.
- In a hill of flour we make a hole and send cottage cheese to it.
- Gently mix the cottage cheese and flour until smooth. The result should be a slightly crumbly crumb.
- We collect the resulting mass and sculpt into one large lump. Due to the friability of the test, the process may take some time (5-7 minutes).
- Wrap the dough with cling film or put in a bag, send it to the refrigerator for 1-1.5 hours.
Cooking Cookies
- Cover the baking sheet from the oven with parchment paper. Turn on the oven to warm up to 180 degrees.
- We take out the dough from the refrigerator, unfold, spread on a flat surface, slightly knead. Next, the dough can be cut into 2-3 parts. Since there are quite a lot of cookies from this amount of dough, some of the dough can be frozen in the freezer for future use.
- Roll out a rolling pin on a flat surface 1/4 of the total amount of dough to a thickness of 5-7 mm.
- From the rolled out dough we cut out the future cookies with the help of extrusion molds (or a glass, cup, etc.). Raise the remainder of the dough, while cookies remain on the surface. The remainder is mixed in the bulk of the dough.
- Pour some sugar into a flat plate. Squeezed cookie dipped in sugar on one side.
- Fold on a baking sheet with powder up. When baking, cookies significantly increase in size, so you need to spread it at a certain distance from each other.
- Put the pan in the preheated oven for 20 minutes. Then we take out the finished cookies, let it cool completely, put it with a spatula on a serving dish.
Such cookies are very tasty with milk, good for tea, coffee or cocoa. Enjoy your meal!
