Step cooking
Cooking this dish is best to start in the evening. Pour one glass of pearl barley into a deep bowl, pour 1 liter of cold water and leave overnight to make the cereal swell well. Water can be changed several times for fresh.
- Any meat is suitable for this dish: beef, pork, chicken - which one you like best. 500 - 600 g of beef should be thoroughly washed, dried with a kitchen towel and cut off all the films and veins. Next, cut it into large pieces.
- We cut one onion into half rings or quarter rings.
- Cut the carrots with large strips with a knife or with a grater.
- For cooking this dish, any dishes, such as a cauldron, deep pan or pan, are suitable, the main thing is to have a thick bottom, since all ingredients should be fried and stewed in one container. We put the pan on the stove, pour 2 - 3 tbsp. l odorless vegetable oil, heat well and spread the chopped meat. Stirring periodically, fry it until golden brown.
- We wash the pearl barley well, transfer it to the pan, fill it with cold water so that it is 1 cm higher than the porridge. Bring to a boil over medium heat.
- Add the chopped onions and carrots to the browned meat, mix.
- Then salt and pepper to taste. Add a pinch of zira, 2 bay leaves. If desired, you can use any spices and seasonings to your taste. Next, add 1 tbsp. l tomato paste, mix everything thoroughly, continue to fry over medium heat until the onions and carrots are soft.
- After the pearl barley has begun to boil, we discard it in a colander and let the water drain. We spread the porridge on meat and vegetables, level it with an even layer.
- Pour boiling water so that the porridge is completely covered. In a porridge, we dig 2 cloves of garlic.
- We cover the pan with a lid, reduce the heat to a minimum and cook for 1 - 1.5 hours until the meat is soft and the porridge is completely cooked. If the water evaporates during cooking, it should be added. But by the end of cooking, no porridge should remain in the porridge. When the porridge is cooked, take out the bay leaf, garlic and mix the porridge with meat. Arrange on plates and serve. A wholesome, hearty and very tasty dish is ready.
