Ingredients
- black pepper peas - 20 g
- cream at least 20% - 200 ml
- Demiglia sauce - 20 g
Step cooking
- In a skillet or pan with non-stick coating, pour 20 g of black pepper with peas and warm it a little over low heat.
- From the foil we make an improvised square bag and put the warmed black pepper into it.
- We wrap the foil in an envelope and break the grains of pepper with a rolling pin or even a saucepan. You can grind pepper in a mortar with a pestle. Pour 200 ml of cream into the stewpan, the fat content of which is at least 20%.
- As soon as the cream is heated to a hot state, dip in them a piece of Demiglia sauce weighing about 20 g.
- Stir the ingredients thoroughly until the sauce is completely dissolved in the liquid and becomes homogeneous. Pour the chopped black pepper into the boiling mass and boil the sauce over low heat for 1-1.5 minutes.
- Ready sauce is passed through a fine sieve. If you do not want even small pieces of pepper to float in the sauce, then strain it through a gauze cloth folded in 3-4 layers.
- Pour the cooked treat into a saucepan and serve.
