Step cooking
- In a deep bowl, mix 45 g of olive oil, 5 g of lemon juice and 3 g of granulated sugar. Add salt and black pepper to taste and mix everything well. If you do not have lemon juice, then you can replace it with vinegar 9%.
- We clean, wash and cut thin onions 2 onions. Put them in a bowl with dressing.

- We put two eggplants on the wire rack and also burn them from all sides until soft.
- We put the finished eggplant on a plate, cut it and select the inside with a spoon.
- Cut the eggplant pulp and put in a bowl with pickled onions.
- We take the peppers out of the bag, peel them off the skin and carefully cut the pulp from the leg so that the seeds do not come across.
- Cut the pulp with bell pepper into pieces and put in a bowl. Mix everything well and serve.
Decoration methods and serving options
- If you want to make this salad less spicy, then add only one onion to it. You can also chop the onion, pour it with cold water and leave it for five minutes, so the bitterness will go away.
- If on the contrary you want to be sharper, then you can add a little hot fresh pepper.
- Most often, this pepper salad is consumed immediately after cooking. If you want to keep it longer, then close in sterilized jars.
- If you wish, you can bake and add tomatoes to the salad. But in this case, choose less juicy fruits, otherwise they may just fall apart when baked.
- If you do not want to bake vegetables on an open fire, then use the oven, but the taste may change slightly.
