Ingredients
- chili pepper - 1 kg
- garlic - 1 head
- sugar - 125 g
- salt - 1.5 tbsp. l
- vinegar 9% - 3 tbsp. l
Step cooking
- This sauce is prepared from a large amount of hot pepper, so during cooking it is recommended to use disposable gloves to help protect your hands. Take 1 kg of chili pepper, cut ponytails on each pepper, and then cut into small pieces, without removing seeds, so that the pieces fit into a blender.
- You will also need to completely clean the head of garlic and add it to the pepper.
- Place the pepper and garlic in a blender, add 1.5 tbsp to them. l salt and beat the vegetables until small crumbs. If your blender is not big enough, do it in several steps. Pour the ground pepper and garlic into a bowl, then add 125 g of granulated sugar to them.
- Next, you need to transfer the mass from pepper to a jar, where it will wander for some time. The jar must first be thoroughly washed, sterilized and the lid prepared by making a small hole in it and placing a special water seal. If you did not have a water seal, then the jar can simply not be too tightly closed with a lid, but then there is a chance that the sauce will simply grow moldy.
- Now the closed jar must be removed in a dark and warm place, leaving for 10 days.
- After 8 days, the bank should open and add 1 tbsp. l vinegar, without stirring, and then close and clean again in its original place. This procedure should be repeated on the 9th and 10th day. On the 11th day, open the sauce and beat thoroughly with a hand blender, then strain through a sieve. You should get a liquid preparation for the sauce, and a slurry of pepper with pits. The gruel can be used for something, or simply thrown away.
- Now take a pan with a thick bottom and pour the liquid into it to evaporate. Set the fire to minimum and wait until the sauce boils, after which the sauce should boil for about 20 minutes. The consistency of hot sauce should resemble ketchup, however, it can be made somewhat thinner. Pour the finished sauce into washed cans and store in the refrigerator.
