Ingredients

  • Wheat flour - 1 kg
  • Water at room temperature - 0.5 l
  • Salt - 0.5 tbsp. l
  • Chicken Egg - 2 pcs.
  • Butter - 50 g

Step cooking

  1. First, prepare the flour: 1 kg sift through a sieve. This is necessary in order to remove grains and foreign particles. And during the sifting, the flour is saturated with oxygen, which will give the future test airiness, uniformity and softness. Approximately 0.5 cups of flour is left to pour at the stage of manual kneading. The rest of the sifted flour is laid out on a surface for rolling. We make a recess in the center of the slide and break 2 chicken eggs into it.
  2. Following the eggs, pour 2 cups of water (0.5 l) into the same recess. Some housewives believe that the dough will be even more delicious if you add not one water to the flour, but 1 glass of water and 1 glass of milk.
  3. Pour 0.5 tbsp. l salt. Pour in 50 g of melted butter. It can be melted in a pan on the stove or directly in the bowl in the microwave.
  4. With a spoon, we begin to gently mix the foods and water in the deepening of the flour hill, gradually involving the flour in the mixing process. If it seems uncomfortable for you to stir the dough with a spoon on a flat surface, then you can do the first (liquid) kneading step in a large bowl. And already at the second stage of hand kneading, put the dough on a board or table.
  5. When the mass in the middle has acquired uniformity, we begin to knead with our hands, collecting flour from the edges to the center.
  6. Gradually, you should get an elastic, pleasant dough with air bubbles inside, but without seals and unmixed places. Typically, the manual kneading step takes about 20 minutes. If you have a bread machine, the kneading process can be mechanized.
  7. It turns out elastic, soft, not sticky to the hands of the dough. It perfectly rolls into a thin layer, does not tear, smells good. So making dumplings from it is a pleasure!
