Step cooking
Dough
- Sift 300 g of durum wheat flour and 150 g of ordinary flour into a deep bowl.
- Add 1 tsp. salt, 1 chicken egg and 30 g of vegetable oil. Stir the ingredients.
- Add 200 ml of boiling water to the resulting mass and knead the dough: first with a spoon, while it is hot, and then with your hands. So that the dough does not stick to your hands, sprinkle it with a handful of flour.
- The finished dough is soft, elastic and non-sticky.
- So that it does not wind off, we send it in a plastic bag or wrap it in cling film. It can also be stored in the refrigerator until the right time.
Filling
- Wash and dry the turkey meat. We remove bones, cartilage, films and skin, if any. Grind the meat with a meat grinder or blender.
- We clear the large onion from the husk and cut into small cubes. To give onion more juice, you can stretch it with your hands.
- Combine the onion with the turkey and add salt, ground black pepper and other seasonings to taste (parsley, marjoram, tarragon, nutmeg, cloves, etc. are great). Stir the ingredients until smooth.
Making dumplings
- From a common lump of dough, cut a small piece and use a rolling pin to roll it to a very thin layer.
- Sprinkle dumplings with flour and put a sheet of dough on top of it. If you do not have dumplings, cook in a convenient and familiar way - this will not affect the taste in any way.
- With a teaspoon, spread the filling over each cell of the dumplings. Adjust the amount of minced meat as you wish.
- We roll out another thin layer of dough and cover them with the filling on top. Now, using the rolling pin movements, we obtain individual dumplings from the dumplings matrix.
- Pour water into the pan, bring it to a boil over high heat and add salt to taste. You can also add bay leaf and a few peas of allspice. Reduce the heat to small and send the dumplings to the pan.
- We wait until they come up, stirring occasionally so that they do not stick to the bottom of the pan, and cook for 5-6 minutes.
- We get them with a slotted spoon. Serve with sour cream, vinegar, mustard, any sauces and other additives to your taste.
