Cooking Stuffing
- To begin with, peel two large onions, rinse, cut into arbitrary pieces. If you have small ones - take a larger quantity. The amount of chopped onion should be at least 2 times less than the amount of minced meat.
- We take 500 g of beef meat. It is better to take a tenderloin from a young animal - veal, it is more tender. We also cut the meat into small pieces. Now we pass onion and meat through the meat grinder.
- In a deep bowl, mix the ground onion with meat, add salt and pepper to taste and mix again. Then add 50 ml of water, mix again. Thanks to water, the minced meat will turn out more juicy. Stuffing is ready, set aside on demand and proceed to kneading the dough.
Cooking dough
- Drive three eggs into a large bowl, add a teaspoon of salt, whisk with a whisk. Then add a glass of water (200 ml), mix well until smooth.
- Sift 700 g of flour, portionwise add it to the egg mixture, mix until smooth. When the dough becomes firm, sprinkle flour on the table and knead with hands for about 10 minutes.
- After that, cover the dough with a bowl, cling film or a clean cotton towel, and let it rest for 20 minutes. Then knead the dough again and leave it covered for 20 minutes. Repeat this procedure 2-3 times. After that, the dough will turn out obedient, elastic, practically will not stick to hands, and will not tear during cooking.
We form and cook dumplings
- We cut a small part from the dough, roll out a rolling pin from it with a layer about 2 mm thick.
- After that, cut circles from the reservoir with a glass. Their diameter will be approximately 5 cm.
- We can stack the circles on top of each other, pouring flour so that they do not stick together. Then fill the circles with minced meat. In each in the center we put about a teaspoon of minced meat, we firmly connect the edges together. Then we connect the tips too. Sprinkle the tray with flour and spread the dumplings. We perform such manipulations with all the dough and minced meat.
- We send a pan of at least three liters to the fire, fill it with water a little more than half, cover with a lid, wait until it boils. After boiling, we send dumplings into it, about 40 pieces. Mix.
- When the dumplings begin to boil, let them cook for 5-7 minutes and take them out using a slotted spoon to drain excess water. Put the prepared dumplings in a deep bowl, add the butter, mix to melt the butter.
- Additionally, we can prepare mustard sauce. To do this, mix 2 tsp. mustard and 3 tsp sour cream, and serve it with dumplings.
