Ingredient preparation
- We thoroughly rinse and clean 600 g of pork liver from films and bile ducts. We cut it into cubes, which we then twist into homogeneous forcemeat through a meat grinder.
- Hard boiled 1 chicken egg. The remaining 2 remain raw.
- We clean 4 cloves of garlic, 300 g of onions and 250 g of carrots from all kinds of inedible parts. Cut the onion into small cubes.
- Rub carrots on a coarse grater or cut into thin strips, and pass the garlic through a press.
- Rinse and dry with a towel or napkin a bunch of greens (dill is best). Shred it with a knife.
Cake base
- Break 2 chicken eggs into a deep bowl. To them we add an incomplete teaspoon of salt and ¼ tsp. ground black pepper. Shake with a whisk or fork to spread the spices.
- After that, add 200 ml of room temperature milk to the egg and mix these ingredients.
- Gradually introduce 150 g of wheat flour and with a whisk we make the mass homogeneous.
- Combine the batter with minced liver.
- Using a submersible blender or mixer, mix the products until smooth. Mechanical mixing will simultaneously eliminate lumps of the liver, which the meat grinder could not handle.
- Add 2 tablespoons of vegetable oil to the liver dough and mix.
- On the stove, turn on the medium heat and set the pan on it. Once lightly grease it with vegetable oil using a cooking brush.
- Pour a portion of the dough with a ladle (according to the consistency it should be like a pancake) in a pan. Fry a thin pancake for 1 minute on each side, then remove it with a spatula and repeat the procedure with the next batch of dough.
Cake assembly
- Again, set the pan to medium heat and pour 1.5-2 tbsp on it. l vegetable oil. Once it is hot, spread the chopped onion and fry it until light golden color.
- As soon as the onion gets the right color, add chopped carrots and a pinch of salt. We cook the frying until the carrots are soft, after which we unload it in a separate container and let it cool slightly. Divide into 8 parts by the number of layers in the cake.
- To 200 g of mayonnaise (home or store - it does not matter) add ¾ of all chopped greens and all the garlic passed through the press. Mix it all and get the sauce.
- Put the 1st pancake on the serving dish, grease it with mayonnaise sauce, do not forget to brush the edges so that they are saturated, and put 1 portion of the carrot and onion filling, spread it with a fork for greater accuracy and accuracy.
- We repeat this procedure with each full cake that you have prepared. The topmost crust is simply greased with sauce and decorate with the remaining greens.
- We divide a boiled chicken egg into protein and yolk. Separately, rub them on a fine grater and decorate the top of the cake.
- We cut the small cake, which does not go to the cake, into strips, and in arbitrary form we also use it for decoration. Let’s soak the cake in the refrigerator for at least half an hour and serve it to the table. Be sure that it will be so beautiful that there will be no need for additional jewelry.
