Step cooking
Typically, a cow’s liver reaches 4-5 kg. We don’t need so much, so we cut the right amount, and send the rest to the freezer - it will come in handy next time.
- I wash my liver well and let it drain a little. While the liver flows, we clean the onions and cut it very large.
- We heat the pan and pour a little vegetable oil. Pour onion into the pan and fry it a little until golden brown. If so, the bow will not be felt in the pancakes. After readiness, do not forget to rid the onion of excess oil (throw it in a colander or put it on a paper towel).
- Cut the liver into small pieces (to fit in the auger of a meat grinder). Grind the liver in a meat grinder.
- Grind the fried onions in a meat grinder directly into a bowl with liver. In the cooked liver mince, add 2 eggs, knead well.
- Now pour 2 tbsp. l sour cream or mayonnaise. Mix again. It was the turn of dry ingredients: salt, pepper, pour two tablespoons of flour and starch. We mix everything very well.
- We cover the bowl with minced meat with cling film and leave to insist for 20-30 minutes. By the appointed time, we heat the pan. Pour a little vegetable oil into it.
- Spread the minced meat with a tablespoon in a pan. For one pancake goes 1-2 tbsp. l minced meat (as you like). Little secret: Do not rush to spread all the stuffing. Put one pancake on the spoon and see how it behaves in the pan. Perhaps it will spread, and it will be necessary to add a little starch.
- Fry on each side for 2-3 minutes. Fritters are fried very quickly, so we are not leaving the stove! When we fry already on the second side, we can make the fire weaker and put out the lid for 1 minute. This step is optional.
- Put the prepared pancakes on a paper towel or parchment paper to remove excess fat. And in the pan we send the next batch. That's all. Enjoy your meal!

Fritters in this recipe are so tender that they literally melt in your mouth. Sour cream (or mayonnaise) “stews” the taste of the liver a little, so even children who do not like cooked liver eat them “for both cheeks”! In addition, you can add different products to the recipe and get a very unusual result.
- Add the minced and minced carrots to the minced meat. Then the taste of the finished pancakes will resemble the taste of homemade liver pate.

- Instead of rice, you can put buckwheat. It’s also very tasty!
- If you want more fritters fritters - add ground lard.
- Grate medium zucchini, squeeze out excess juice, cut greens and add all this to the minced meat. The summer version of the liver pancakes is ready!
