Step cooking
- Prepare the chicken liver (0.5 kg). Remove films from it, cut all ducts and cut into pieces of arbitrary shape.
- Roll the prepared liver in a blender or meat grinder.
- Grind pork fat (150 grams) without the skin with a blender or meat grinder and put it to a twisted liver.
- Add semolina (5 tablespoons) to the liver stuffing.
- Beat in a chicken egg (1 piece). Salt (1 teaspoon of salt) and pepper (1/2 part of a teaspoon of black pepper). Add baking soda (1/2 teaspoon) and mix thoroughly. Set the minced meat as a maximum for an hour, so that the semolina swells and the cutlets are tender and airy.
- Peel and onion (2 pieces) and cut into medium-sized cubes.
- Place the pan on the stove and dissolve the butter (a tablespoon) in it. Add a little vegetable oil (20-30 ml). When the oil is warm, put the onion, cut into cubes, into the pan and fry it until golden brown with constant stirring.
- Place the fried onions in the minced meat and mix well. Now the mince is finally ready, and you can fry cutlets.
- Heat the pan on the stove and add vegetable oil (30-40 ml) to it. Spread the minced meat in a well-heated oil with a tablespoon and fry the meatballs over medium heat on both sides until golden brown.
- Remove rosy cutlets on a plate lined with a paper towel. So overcook all the prepared stuffing.
- When all the cutlets are fried, put them in a pan, pour 1/4 of a glass of clean water, cover the pan with a lid and steam them for 10-15 minutes.
Decoration methods and serving options
Serve tender chicken liver cutlets hot with any side dish or vegetable salad. You can also serve sauce with liver cutlets to complement the taste. To make the sauce, mix olive mayonnaise with sour cream and add finely chopped garlic and dill.
Boil potatoes or pasta on the side dish.
