Step cooking
- In a deep bowl or bowl of the mixer we combine 110 g of softened butter, 90 g of powdered sugar, a pinch of salt and 20 g of honey, we grate well until creamy. Powdered sugar can be replaced with regular sugar, and honey can be omitted altogether. Also, instead of honey, you can use molasses or invert syrup - they give softness to the liver so that it does not stale for a long time.
- Then pour 2 tbsp. l milk and drive in an egg, continue to beat to obtain a homogeneous mass.
- 320 g of premium wheat flour should be sieved to enrich it with oxygen, and immediately add all to the dough. Using our hands we quickly collect the dough into a ball. Long kneading is not necessary. The dough is elastic, obedient, not sticky to the hands.
- Wrap the finished dough with cling film or put in a food bag and leave at room temperature for 20 to 30 minutes to make it more plastic.
- We lay out the rest of the dough immediately on parchment paper or a silicone mat, on top you can cover it with a film so that the dough does not stick to the rolling pin, and roll it into a layer 4 - 5 mm thick.
- We cut uneven edges with a roller knife. We collect the excess scraps in a lump, knead, roll into a layer and again make cookies.
- We cut the flat dough into rectangles of the size that you like. You can cut cookies with any cookie cutters. We distribute cookies on parchment paper at a small distance from each other.
- Transfer the paper with the cookies onto a baking sheet and put in the refrigerator for 30 minutes so that the butter grasps and it is easy to apply a drawing on top.
- We take out the baking sheet from the refrigerator, and with the help of a curly signet, pressing it on top of the cookies, apply any pattern. If you have a curly rolling pin or a texture rug, in the same way, pressing on the cookies, apply the drawing.
A distinctive feature of this cookie is that it is not baked at the usual 180 degrees, but at high temperature. This is done so that the texture pattern that was applied to the cookies quickly baked under the influence of high temperature, and did not have time to swim. Therefore, preheat the oven to a maximum temperature of 250 degrees. - The baking time of cookies is very fast - only 5 - 7 minutes, it should lightly brown. If you plan to cook cookies without a pattern, simply cutting out circles or rhombuses, you can bake at 180 degrees, only the time should be increased to 15 - 20 minutes. Cool the finished cookies, transfer to a beautiful plate and call the relatives and friends to the table.
