Step cooking
Dough
- We take 500 g of wheat flour, add a teaspoon of salt and a tablespoon of starch to it, sift all the ingredients into a container for kneading the dough.
- In a separate bowl, beat one chicken egg and 100 ml of light beer with a whisk until a uniform consistency is formed.
- In a sifted wheat flour with dry ingredients, pour the egg beaten with beer.
- There we add butter, softened at room temperature (250 g).
- We begin to gently knead the dough with your hands, combining all the ingredients into a soft, tender and homogeneous mass. The dough should be sticky and pliable.
- We form a ball from the resulting mass, which must be wrapped in cling film (or plastic bag) and left in the refrigerator for two hours. The mass should rest well and cool.
Cookies preparation
- Cut the chilled dough into two equal parts.
- We roll out each part with a rolling pin until a very thin layer is formed, approximately equal in size.
- Sprinkle the entire surface of one layer with sugar, the amount of which depends on taste preferences.
- From above we impose a second, thinly rolled layer, we firmly press it to the first.
- We cover the entire surface with sugar, the quantity is determined according to taste.
- Sprinkled layers are doubled.
- Roll out the rolling pin into one large layer, which is also covered with sugar.
- We begin to roll the formation, forming a roll on both sides, reaching the middle.
- The resulting double roll is pressed a little and begin to cut small pieces (1-2 cm wide) - the future cookie.
- We put each piece in an upright position and gently roll it out, until the formation of cookies with a thickness of about 0.7 cm.
Baking
- We prepare the oven: preheat it to 200 degrees. The formed ears are laid out on a baking sheet covered with parchment paper.
- Sprinkle on top of the product a small amount of sugar, which when baked forms a caramel crust.
- Place the baking tray with the ears in the oven for about 20 minutes until golden.
