Step cooking

- Gently separate the proteins from the yolks of three fresh (this is very important!) And well-cooled chicken eggs.
- In a volumetric cup, beat the proteins with a mixer in a strong foam until a dense peak occurs. Begin to whisk at low speeds, gradually adding the speed of rotation of the blades as the formation of foam.
- Grind the yolks into a homogeneous mass, gradually adding 50 g of powdered sugar.
- Pour another 50 g of powdered sugar into the protein foam, and beat the proteins again.
Making a biscuit dough
- Turn on the oven for heating, setting the temperature to 180 ° C. Slowly and gently mix the yolk mass with the dense protein foam, crushed with powdered sugar, working exclusively with a spatula, and in no case with a mixer.
- Into the mixed egg mass, 75 g of wheat sifted flour are added portionwise, mixing the dough with light movements from top to bottom.
- Transfer the finished dough into a pastry bag.
Bake Ladies' Fingers
- Set the sponge cake in the form of thin short sticks on a baking sheet covered with baking paper (or oiled parchment).
- Before baking, sprinkle the surface of future cookies with the remaining (20 g) powdered sugar or small sugar.
- Bake for 10-13 minutes. in a well and evenly warmed oven until a straw shade of baking appears.
