Step cooking
- Using a sieve, sift about 180 g of flour into a dough bowl, add 1 tbsp to it. l baking powder and a pinch of salt. Stir all the ingredients.
- Add 100 g of softened margarine to the bowl. Hand rub the margarine with the rest of the ingredients, so you get flour crumbs.
- Add about 50 g of sugar to the bowl and mix well with a spoon.
- Take one chicken egg and separate the protein from the yolk in the bowl. Add the yolk immediately to the dough, and there is a tablespoon of sour cream. First, mix everything with a spoon, and then knead the dough with your hands to get one smooth lump.
- Then cover it with cling film and put in the refrigerator for half an hour.
- In the meantime, wash 2-3 apples, cut, remove the core and peel. Cut apples into small slices, about 0.8-1 cm thick.
- In a bowl, mix 1 tsp. cinnamon with 4 tbsp. l sugar to make a homogeneous mixture. Shake the remaining egg white in a bowl with a fork to make it more liquid.
- Sprinkle flour on the table, put the dough on it and mash a little with your hands. Then roll out the dough with a rolling pin with a thickness of not more than 5 mm.
- Now use the cookie cutter to cut out the circles from the dough. The circles in diameter should correspond to apple slices. If you don’t have a cookie mold, choose the right glass for this procedure.
- Remove excess dough from cookie blanks, roll it out again and make the same blanks. Cover the pan with parchment paper. Then take each circle in turn and put on one edge of the apple slice with the thick side out. Fold the circle in half, covering the apple.
- Using a pastry brush on top, grease the dough with whipped protein and dip the dough in a mixture of cinnamon with sugar on the same side to completely cover the top of the cookie. In the same way, form all the circles and lay on a prepared baking sheet at a small distance from each other.
- Preheat the oven to 180 ºС and send your cookies to bake for 15 minutes. Ready cookies should be browned to brown. When ready, remove the cookies from the oven and let it cool.
Cooked shortbread cookies according to this recipe are tender and juicy due to apples in the middle. And the crust baked in cinnamon with sugar becomes crispy and insanely aromatic. Serve cookies with tea or coffee.
