Step cooking
- First you need to prepare the necessary ingredients, namely - grate the cheese (in this case we use emmental, but can be replaced with another grade) and cut cold butter into cubes.
- For mixing, it is better to use a blender, because in working with shortcrust pastry the most important thing is not to heat it. And since the hands give off heat, the dough may simply not work. If you knead this dough with your hands, be sure to do it very quickly. We transfer the grated cheese into the blender bowl.
- Add butter there.
- Mix well.
- After the mixture has turned into a homogeneous mass, you can add the rest of the ingredients: flour, salt and vodka.
- Now again, mix the blender until a homogeneous dough.
- After about a minute and a half, the dough should crumble to a homogeneous sufficiently dense consistency. It happens that the dough cannot form into a ball, and for this you need ice water. Add at least one tablespoon of ice water and try kneading further. If the consistency does not change within ten seconds, add a little more ice water. Then you will form a ball.
- From the received test we take one third and roll it into a layer. You can choose the thickness to your taste, but keep in mind that the thinner you roll, the more crispy the cookies will be.
- Next, cut the curly knife into strips 4-5 cm thick. If there is no curly knife, you can use the usual one.
- After that, we trim the edges of the cookies so that they are equally accurate.
- We cut each strip into two or more parts, depending on the diameter of the rolled seam.
- Cover the baking sheet with baking parchment. We shift the prepared strips onto a baking sheet. Parchment does not need to be lubricated, since there is already enough butter in the cookie so that it does not stick and does not burn.
- To make it more similar to cheese, we can make small holes in the cookies using a plastic tube. Holes can be done completely randomly in the middle of the stripes and around the edges.
- Preheat the oven in convection mode to 200 degrees. Put the baking sheet in the oven and bake for 10-12 minutes. The time depends on how thick the dough will be.
Useful Tips
- Cheeses with intense aroma and taste, such as emmental, maasdam or blue cheese, are best suited for this recipe. But keep in mind that if you don’t like these cheeses in their raw form, then they will not suit you in cookies, because it completely takes over the taste of cheese.
- To spice up the liver, you can sprinkle it with salt, sesame seeds, herbs, paprika and any spices you like.
