Step cooking
- Butter should be removed from the refrigerator for two to three hours before cooking, so that it becomes room temperature. Mash the oil slightly with a fork. Pour a little measured amount of sugar (150 g) and mix thoroughly. You can use a mixer, you can simply grind the ingredients with a fork.
- Pour in a little vanilla extract (can be replaced with vanilla sugar). Stir again.
- Now it's the turn of the eggs. They need to be administered one at a time and thoroughly beat the mixture.
- In a separate deep bowl, prepare the sifted wheat flour and mix it with a pinch of salt, a teaspoon with a hill of baking powder and 100 g of almond flour. Almond flour will add an indescribable aroma and taste to the liver. Put a mixture of eggs, butter and sugar into the flour.
- From all this, knead the dough well. It should turn out to be very shiny, soft, not tight, not stick to your hands. For convenience, divide the dough into two pieces and wrap in cling film. Put the pieces in the refrigerator for 2 hours. The dough will cool and become more even and docile.
- Turn on the oven at 180 ° C. Roll out the dough into a layer 3 mm thick.
- Using a large cookie cutter, cut out the bases that go to the bottom, and cut the bases to the top with cutters with cutouts in the middle (if there are none, see below how to replace these molds). Calculate that the number of bases on the bottom and top coincide. Put parchment paper on a baking sheet, and on it the basics of future cookies.
- Bake no more than 10 minutes. Cookies should be yellow and not browned anywhere!
- Let the liver cool. Put jam in the pastry bag at this time. Jam can be any, most importantly, to homogeneous and thick. You can cook it yourself from fruits and sugar: grind fruits through a sieve, boil and boil with sugar for half an hour.
- Top the top with powdered sugar.
- When the cookies have cooled, you can collect: squeeze the jam onto the lower half in the center with a syringe.
