Step cooking
- We will prepare all the ingredients and the work surface. If you use frozen dough, you must first thaw it on the bottom shelf of the refrigerator or at room temperature. Prepare the filling. In a deep bowl, separate 2 squirrels and beat with a mixer at the highest speed into a strong foam. Squirrels will be easy to beat if they are fresh and chilled. Not a drop of yolk should get into the protein, and the container in which you beat must be dry and clean, without a drop of fat, otherwise the proteins will not break.
- When the proteins are beaten well enough, add one sachet of 7 - 8 g of vanilla sugar. Then, without stopping whipping the squirrels, pour a little, slowly, 150 g of sugar. The main thing is not to add all the sugar at once, otherwise it will dissolve immediately and the proteins will become liquid.
- For the filling you will need 150 g of nuts, it can be one type of nuts - walnuts, almonds, hazelnuts or a mixture of different nuts, choose to your taste. Nuts should be fried in a dry frying pan or in the oven, so that they become more flavorful, and then chopped with a blender, in a mortar or finely chopped with a knife. In whipped whites with sugar, add chopped nuts and carefully, slowly, mix, so that the whites do not settle, but remain lush and airy.
- Roll out the puff pastry into a layer 2 - 3 mm thick.
- Then we cut the circles from the whole dough in a round shape with a diameter of 10 cm. You can adjust the size of the cookies at your discretion, you can make it larger or smaller.
- In the center of each circle we spread the filling of proteins and nuts, 1 teaspoon. Next, pinch the dough, as if preparing dumplings. The most important thing is not to pinch the edges too much, since during baking they should open slightly.
- Preheat the oven to 190 degrees. Put the prepared cookies on a baking sheet covered with parchment paper, grease with egg yolk.
- Put the baking sheet in the oven for 15 - 20 minutes until golden brown. From this amount of cookie products, 40 pieces are obtained.
- We put the finished cookies on a plate or dish, you can sprinkle with powdered sugar. We serve to the table.
