The recipe describes the preparation of shortbread cookies in vegetable oil. Baking with vegetable oil is a budget option for confectionery. It is also intended for those who, for various reasons, excluded butter and margarine from their diet. - Break chicken eggs (3 pcs.) Into a deep bowl.
- Add salt (pinch), granulated sugar (180 g), vanilla sugar (to taste) to the bowl. Beat the composition with a mixer into a thick mass with foam on top. Pour vegetable oil (100 ml) into the mass. Beat with a mixer for about 1-1.5 minutes until smooth.
- Wash the lemon well (1 pc.), Using a fine grater, remove from the citrus zest. Add the zest to the bowl to the mass. Pour wheat flour (370 g) into a sieve-mug, pour the baking powder for dough (1 tsp) on top of the flour. Mix baking powder with flour. Sift the flour mixture in small portions into a bowl with a liquid portion, mix with a mixer at low speeds.
- When the dough becomes too thick for the mixer, put it from a bowl onto a tabletop sprinkled with flour (on a silicone mat), knead the dough with your hands.
- When the dough is ready, grease the countertop and hands with vegetable oil so that the dough does not stick.
- Roll the dough into a thin layer 5-7 mm thick.
- Cut cookies with a greased cooking oil tin, spread on a baking sheet covered with parchment paper.
- Bake products in an oven heated to 180 ° C for 10-15 minutes. The finished cookie has a slightly golden color. Do not over-bake the pastries (it should not be ruddy), otherwise the cookies will become dry and hard. To make sure cookies are ready, take one thing out of the oven, break it, look at the degree of readiness of the dough inside.
Cookies in vegetable oil can be made in various shapes, both flat and voluminous, in the form of gingerbread cookies. Various flavors can be added to the dough: raisins, dried apricots, dried or dried berries, crushed nuts and other ingredients.
