Step cooking
- Put a piece of butter (125 g) in advance for a while in the freezer for cooling.
- Sift 240 g of flour into a deep bowl.
- Rub on a coarse grater 125 g of chilled butter.
- Add a pinch of salt. Using our hands or a spatula, grind the flour and butter to a state of fine crumbs.
- Add 100 g of sugar. And again we mix everything. We should get a loose loose mixture, similar to coarse, slightly wet sand.
- We make a deepening in the center of the mixture and pour 80 ml of beer into it.
- Using a spatula, mix the beer into the flour. When it becomes difficult to control with a spatula, we stir with our hands. As a result, we get a soft elastic dough that does not stick to your hands. We collect the dough in a compact lump, put in a bowl, cover it with cling film and send it to the refrigerator for an hour.
- After an hour, we take out the dough, roll it out onto a thin layer with a rolling pin and cut out cookies. This can be done using ready-made cutting forms: we simply squeeze the figures out, trying to arrange them as close to each other as possible so that there is less waste of dough. Waste, of course, do not throw away. We simply assemble them into a new lump, which we also roll out and repeat the cutting operations. If you don’t have any forms, you can use a special knife with a curly edge. If there is none, then you can just cut the diamonds (with a normal kitchen knife: first, divide the dough into strips, then cut them diagonally) or use a glass and cut out the dough circles.
- We cover the baking sheet with parchment paper, turn on the oven for heating - we need to warm it to 180 degrees. Pour 50 g of sugar into a plate, add one teaspoon of cinnamon, mix well. Dip the finished figures of the future cookies with one side in a mixture of sugar and cinnamon and lay this side up on a baking sheet at a small distance from each other so that they do not stick together - note that they will separate slightly when baking.
- We send the pan to the oven for 15-20 minutes. The time is approximate, as it will depend on the thickness and size of the resulting figures. Be guided by color of products: take out immediately, as soon as they begin to acquire a blush.
