Step cooking
- Drive one egg into a bowl, pour 100 g of sugar and grind with a whisk.
- Add 10 grams of vanilla sugar (you can replace it with one teaspoon of vanilla extract or a pinch of vanillin) and work again with a whisk.
- Add 100 g of mayonnaise, mix until it is completely dissolved.
- Rub the zest of one lemon on a fine grater (do not forget to thoroughly wash the lemon thoroughly with warm water) and also send it to a bowl with the dough being prepared.
- Sift 300 g of flour and one teaspoon with a baking powder slide into a separate dry bowl, mix well.
- We begin to gradually add flour to the egg-sugar mixture: we do this in small portions, each time stirring with a whisk until the flour is completely dissolved in the mixture.
- When the dough is thickened so much that it will be difficult to interfere with the whisk, we switch to manual kneading and knead the dough until you get a soft, elastic dough that does not stick to your hands. Depending on the quality of the flour, a little more or less may be needed. Just watch the dough - when it stops sticking to your hands, it’s worth stopping right away, you shouldn’t pour out all the flour, otherwise the dough will turn out too tight, which will not affect our cookies in the best way.
- We prepare the baking sheet: cover it with parchment paper for baking. We turn on the oven to warm up to 180 degrees. With a rolling pin, we roll the resulting dough into a layer with a thickness of approximately 5 mm.
- Using cookie cutters, we squeeze out figures from the dough, trying to arrange them denser to each other in order to use as much dough as possible at a time. We will roll up the dough that remains after cutting down the first batch of cookies into a new lump, roll it out again and cut the figures out again.
- The resulting figures are placed on a baking sheet at a small distance from each other, since when baking they are a little blurry. We send the first batch of cookies to bake in a preheated oven for about 20-25 minutes. The time is approximate - just watch how the cookies are browned. When gilded - take out.
- It is advisable to let the finished cookie cool down directly on the baking sheet, but if you need it to bake the next batch, then remove the cookie with a flat spatula and put it on the board to cool. If you wish, you can decorate the pastries with powdered sugar by simply rubbing it on each cookie.
