Ingredients
Product | amount |
Flour | 300 g |
Kefir | 120 g |
Butter | 100 g + 30-40 g for the filling |
Sugar | 90-100 g + 30-40 g for the filling |
Soda | 0.5 tsp |
Salt | 0.5 tsp |
Cinnamon | 1 tbsp. l |
Step cooking
- Turn on the oven at 180 ° C. Sift the flour through a sieve into a large bowl to saturate it with oxygen. Pour half a teaspoon of salt into the flour and mix a little.
- Butter should stand at room temperature for a couple of hours so as not to be too hard. Cut the butter into small pieces and pour into flour.
- Hands stir oil with flour. It should be a kind of crumb. We leave the bowl with this baby.
- We combine kefir and sugar in another bowl, with a fork, beat the mixture. Let stand a little so that the sugar dissolves, and whisk again. Add 0.5 tsp. soda and mix well again.
- Pour kefir-sugar solution into the crumbs from flour and oil.
- Mix all the ingredients and knead the dough. It should turn out smooth, shiny, not cool, but not stick to your hands!
- We spread the dough on the table and roll it into a layer about 0.5 cm wide.
- Melt in the microwave or on a stove 30-40 g of butter.
- In a small bowl, mix sugar and cinnamon (1: 1 ratio).
- The dough, which has already been rolled into a layer, is smeared with a pastry brush with liquid and warm butter.
- Gently sprinkle a mixture of cinnamon and sugar on top.
- Now we turn the dough into a tight roll. All the filling should be inside.
- We take the sharpest knife (it should have a wide and not short blade) and carefully cut our roll into circles. The thickness of the circle is about 1-1.5 cm.
- Parchment paper on the baking sheet with stele and lay the dough pieces on top. They should not touch each other, as during baking they will rise. Each circle is greased again with oil and sprinkled with sugar and cinnamon (not too hard).
- Put the baking sheet in the oven and bake for about 15-20 minutes. We get out, let cool and try! Enjoy your meal!

If you do not like cinnamon, then you can try replacing it with another component:
- cocoa powder (perfect);
- chicory (soluble);
- coffee (soluble, but not in granules, but powdered);
- coconut flakes (great if it is colored - two or three colors - then you can pour in stripes and in the cut it will turn out very nice and elegant);
- poppy;
- sesame.
