- First, mix almond flour and icing sugar together. Sift through a sieve (it should not be very small).

- If you want your pasta to be bright and colored, then at the end of whipping you need to add dye. Add a couple drops of gel food coloring and whisk in just a few seconds. This is enough to dye evenly distributed in the meringue.
- After that, add the prepared meringue to the mixture of almond flour and icing sugar, and begin to mix gently. At first, the dough will seem quite thick. Continue kneading until the pasta is shiny and uniform, so that when you lift the spatula, the dough flows from it with a wide ribbon. It is very important not to overdo it. Pasta dough should not be too thin. It’s better to mix it up a bit than to mix it. Transfer the mass to a pastry bag with a diameter of approximately 8-10 mm.
- We place the pasta on a baking sheet with a silicone mat or baking paper. The most convenient pasta size is 3-4 cm, but you can choose the diameter based on your own preferences.
- Before baking, you need to dry the pasta for about 15-20 minutes. A tangible crust should form on them. When you touch the pasta, nothing should stick to the finger. Preheat the oven to 150 degrees. Bake pasta for about 15-17 minutes. Baking time depends on each specific oven. Therefore, in the process, follow the pasta. Ready pasta easily move away from the rug or parchment, while inside they remain a little soft. Put the pasta on a table or wire rack and let it cool completely. After that, they can be filled with any filling.
