Step cooking
- We measure and prepare in advance the main ingredients. In a small stewpan over a small fire, melt 75 g of butter. Drive 3 eggs into a deep bowl. Add 80 g of sugar to the eggs and beat thoroughly with a whisk. For whipping, a large volume whisk is best suited. The larger the whisk, the more airy your mixture will turn out. The egg mixture should double in volume and fill well with air.
- When the mixture becomes dense, and its texture is creamy, sift 80 g of flour into it through a sieve.
- In the resulting mass, add 1 tbsp. l pastry poppy so that the cookies turn out more crispy.
- On a fine grater, rub the zest of one lemon and mix with the bulk. According to G. Ramsey, it is the lemon zest that adds the necessary aromatic notes to the liver and makes it so magical. Zest of orange, lime or grapefruit is also suitable.
- Pour the melted butter into a bowl so that the oil drains into it along the walls. This technique will help you cool the melted butter faster.
- Take a spatula and gently mix the mixture so as not to beat it. The dough should keep airiness. The better you mix the mixture, the better the cookies will rise in the oven. The cookie dough prepared according to this recipe can be prepared in advance, for example in the evening, and in the morning only pour into molds and bake.
- Lubricate the baking dish with butter and chop them on top with a little flour. It will be enough 1 tbsp. l Flour is needed so that the cookies do not stick, and you can easily get it out of the molds.
- Tilt the mold and gently tap it several times so that the excess flour spills out. Fill out the forms all the way to the top edges.
- Bake in the oven at 180 º C for 10 minutes. Remember that the oven door cannot be opened during baking, otherwise the cookies will settle.
