Step cooking
- In a deep bowl, beat three large chicken eggs, add 150 g of sugar and beat everything with a whisk. Add vanilla sugar or a pinch of vanillin (or a drop of vanilla extract for flavor) if desired. Beat briefly until sugar is dissolved.
- Add 250 g of coconut flakes to the egg-sugar mass and mix all the ingredients thoroughly with a spatula. You should have a uniform, soft dough that can easily be rolled into balls.
- Take a baking sheet and cover it with parchment baking paper. There is no need to grease the parchment.
- Use your hands to form small, dense balls of dough about the size of a walnut or a little larger. Cooking time depends on the size of the cookies: large balls bake longer, small balls - faster. Put coconut balls on parchment.
- Preheat the oven to 160 degrees and send the cookies to bake until a golden crust appears. It takes about 15-20 minutes.
- Remove the finished cookies from the oven, let it cool, put on a plate and serve.
Decoration methods and serving options
Coconut cookies are ideal if you intend to treat guests with aromatic coffee. But tea lovers will also be satisfied if you serve coconut cookies to the drink.
Cookies themselves do not need special decoration, and the aroma of fresh pastries will awaken the guests' appetite. But if you still want to decorate the dish, put the cookies on parchment or cling film, let cool. In the meantime, make icing from cocoa, sugar and milk. Pour the cookies with a thin stream of slightly cooled glaze, forming a chocolate "spider line", and let the glaze harden. Then put the cookies on a plate and serve. The icing can be replaced with a store-bought chocolate syrup, but note that it will not harden and remain sticky.
Also, finished cookies can be laid out on a flat plate with a slide in the form of a pyramid and sprinkled with powdered sugar or coconut flakes. A number of almonds or hazelnuts can be placed next to the cookies.
