Step cooking
- We take a sieve, sift 420 g of flour so that it is enriched with oxygen, pour it into a deep bowl. Pour 5 g of baking powder into flour, 1 g of salt, mix with a tablespoon.
- We take 240 g of cold butter, cut it into small cubes with a knife, put it in a bowl with flour and baking powder, carefully rub it with our hands into the butter crumbs. As a result, all flour should be oily.
- Break 2 raw chicken eggs, separate the yolks, put them in a deep bowl. We do not need proteins. Pour 120 g of sugar to the yolks, whisk with a whisk until light foam. We take fat sour cream 22 - 25%, not lower, spread it to the yolks with sugar, add 10 g of vanilla sugar, mix thoroughly until the sugar is completely dissolved.
- In a bowl with greasy butter crumbs, add the egg-sour cream mass, intensively knead the dough.
- Separate ⅔ of the obtained test, form a cake from it, wrap it in plastic wrap, send it to the refrigerator for 1 hour so that it takes on a homogeneous structure.
- From the rest of the dough we form a cake, wrap it in cling film, and send it to the freezer for 1 hour to freeze it.
- We take parchment paper, cut it to the size of the baking dish. We take out дост of the dough from the refrigerator, put it on parchment, roll it with a rolling pin to a certain size, transfer the dough with paper to a baking sheet. Top the dough with apricot jam. You can use any jam to your liking.
- We take ⅓ part of the dough from the freezer, take a vegetable grater, rub the frozen dough, put it on top of the jam. We turn on the oven, heat it to a temperature of 190 degrees.
- In a well-heated oven, put the form with the dough. Bake cookies for about 30 minutes until golden, ruddy. We take out the finished cookies from the oven, do not get out of the form, cool for 15 minutes. After that, we transfer the cookies on parchment paper to a cutting board, cut them into rectangles, leave them to cool completely. The cookie is ready.
