Vegetable oil for frying | 500 g |
Cognac or vodka (optional) | 30 g |
Step cooking
- Melt the butter in a water bath and sift the flour. Alternately add all the ingredients into a deep bowl or pan. First, chicken eggs, then milk.
- Add salt, sugar, butter.
- Mix well with a whisk. Optionally, add vodka or cognac. Alcohol will make cookies even crispier.
- We introduce the sifted flour in stages, mixing thoroughly until smooth. It is very important to achieve a complete absence of lumps.
- After the dough becomes difficult to knead with a spatula or a whisk, put it on a silicone mat or table surface, previously sprinkling them with flour.
- The dough should be tight but elastic. This will take about 10 minutes. As necessary, add a little flour. The dough can be considered fully prepared after it stops sticking to your hands.
- Next, cover with cling film and leave to rest for 30 minutes.
- After that, grease the mat with vegetable oil so that the dough does not stick to it. Roll out the dough as thin as possible. The thinner the layer, the more crisp the brushwood will turn out.
- We take a pan with a thick flat bottom and pour oil into it so that it becomes hot. There must be a lot of oil so that brushwood literally boils in it.
- While the oil is heating up, cut the dough into long strips.
- Next, we divide these strips into three parts, and in the middle of each piece we make an incision.
- Twist the brushwood. We take this middle, rotate inward once, and then the second. This must be done with each strip.
- Fry brushwood in hot oil. Note - it is fried very quickly. It’s better not to leave it, because in a minute it will need to be turned over.
- Once the brushwood is browned, you can get it on a paper towel.
- After the cookies have cooled, you need to carefully sprinkle it with powdered sugar.
