Step cooking
- First, prepare the liver: rinse it under water and clean it from the film. Next, cut 400 grams of liver into small pieces on a cutting board. By the way, you can choose the liver to taste, like pork, and calf, lamb or even chicken.
- In order not to cover each piece with flour, after we cut the liver, simply pour ½ cup of flour into a plate with the liver and mix everything well with a kitchen spoon.
- On a gas or electric stove we set to heat the pan over medium heat. Pour a little sunflower oil into it.
- When the oil warms up, pour the liver into the pan, salt and pepper to taste. Fry on both sides until a crust appears for about 15 minutes.
- While the liver is languishing in a pan, take 1 fresh onion and cut it into half rings with a sharp knife.
- In order not to use a lot of dishes at once, simply move the liver in a pan, free up some space and put the chopped onion there. Thus, in one pan, the liver and onions will be fried immediately.
- We take 150-200 grams of sour cream, the same amount of boiled water and mix everything well in a cup. It is advisable to take sour cream 10-15% so that it is not too fat.
- Mix onion and liver, and pour on top all previously prepared sour cream sauce. We mix everything well, salt, and let it simmer for 10 minutes over low heat.
- The dish is ready, you can serve it with rice or potatoes. Enjoy your meal!
Tips
- The smell of any liver must be pleasant, soft and not too saturated. If you hear the smell of ammonia, then you should not buy such a liver, most likely, the animal was very sick.
- If the bile ducts in the section of the liver are contaminated, then this liver belonged to a very old animal.
- The brown-orange or greenish-gray color of the liver warns that the animal was fed with artificial additives, or it was very painful during life.
- If you find that the piece is sticky, loose - do not buy it, it was stored incorrectly.
- When buying any liver, do not be afraid to touch it, smell it, ask where and how it was stored. Remember, the buyer is always right.
- Do not salt the liver before cooking, and do not overcook it, so as not to spoil the taste of the dish.
- And the simplest but most important rule is to store the liver only in the refrigerator so that it does not deteriorate quickly.
