Step cooking
- To start cooking, rinse 700 g of beef liver under cold running water, then dry with paper towels. If necessary, remove the thin film and blood vessels with a knife. On a cutting board, cut the liver into small pieces.
- Pour about 40-50 ml of vegetable oil into a deep frying pan and lightly heat it. Then put the chopped liver in a pan and fry it over medium heat, stirring with a spatula. After 10 minutes of cooking, sprinkle the liver with salt to taste. Cover the pan and fry the liver for about 10 minutes.
- In the meantime, clear 4-5 pcs. peel the onions, rinse and cut into medium-sized cubes. Pour about 10-15 ml of vegetable oil into a separate deep frying pan, heat slightly and put the onions in it. Sauté the onion until golden brown, occasionally stirring with a spatula.
- Add about 150 g of sour cream to the liver pan and mix well with a spatula. Sprinkle black pepper over the liver to taste. Optionally, you can use other spices and herbs.
- Pour roasted onion into a pan with liver and mix well. Cook everything together over low heat for about 10 minutes. If necessary, add a little more salt to the dish.
- Rinse a small bunch of fresh herbs under running water. You can use any herbs to taste, parsley is good. Grind the greens with a knife on a cutting board and add to the liver at the end of cooking. Mix everything gently and let the dish stand a little under the lid before serving.
To prepare this fragrant and satisfying dish, you can use any other liver - chicken, turkey, pork. Moreover, the liver of the bird is prepared much faster.
Optionally, add grated carrots and a little garlic to the onion fry. This will diversify and saturate the dish even more. To make the sour cream sauce thicker, you can roll the liver before cooking in wheat flour.
Beef liver in sour cream sauce is suitable for any side dish - mashed potatoes, porridge to your taste, boiled rice or pasta. As an addition, a light vegetable salad or canned vegetables will be appropriate.
