Step cooking
- We wash well 700 g of beef liver, be sure to blot excess water with a paper towel. Next, we clear the liver of all films and veins. First, cut the liver into plates 1 cm thick, and then cut each plate into strips. Thanks to this cut, the liver will quickly and evenly fry. In order for the liver to be even softer and softer, it can be soaked in milk for an hour. For this recipe, any liver is suitable: pork or chicken, but beef liver is considered the most useful.
- Salt and pepper the chopped liver to taste, mix well. At this stage, you can add any spices and seasonings to your taste. Ground nutmeg goes well with the liver.
- We put the pan on the stove, pour 50 ml of olive oil and warm it well. Olive oil can be replaced with ordinary odorless vegetable oil. For a larger flavor, you can add a slice of butter.
- While the butter is warming up, roll off all the slices of the liver in wheat flour, a little shake off the excess flour. We spread the liver in preheated oil, fry over medium heat for 5 - 7 minutes, stirring occasionally to make the liver evenly fry.
- We cut one large onion into thin half rings and add to the liver. The more onions, the more delicious the dish. Fry everything together over medium heat, constantly stirring until the onion is browned. In addition to onions, grated carrots can be added to the liver.
- When the onion is browned, this means that the liver is ready. In no case can the liver be overcooked, as it will become very hard and tasteless. Add 250 g of sour cream 15 - 20% fat and pour 150 ml of milk, mix everything well. Instead of sour cream and milk, you can add not too fat cream.
- Add a little more salt and pepper, bring to a boil and simmer over medium heat for 2 - 3 minutes, sour cream sauce will saturate the liver and thicken a little. Ready liver can be sprinkled with any chopped herbs. The liver is very tasty, soft and juicy due to the sauce. Such a liver is suitable for absolutely any side dish: boiled potatoes or mashed potatoes, vegetables, any porridge, pasta.
