Step cooking
- We will prepare all the ingredients and the work surface. We start cooking with frying onions. Two large onions are cleaned and cut into thin half rings. The more onions, the tastier the dish.
- We put the pan on the stove, pour 2 - 3 tbsp. l vegetable oil.
- Sliced onions are sent to the heated oil and stirring occasionally, fry over medium heat until golden brown. If desired, you can add chopped garlic or grated carrots. Put the finished onion on a plate.
- 500 g of the liver are well washed, cleaned of all films and veins. Any liver is suitable for this dish: beef, pork and chicken. Beef liver is best chosen from a young animal, it has a light color. If the liver is dark in color, then it must be soaked in milk for an hour, then it will become softer and more tender. We cut the liver into large slices 1 - 1.5 cm thick.
- We lay out the pieces of the liver in one layer, cover with a cling film from above, and with the help of a kitchen hammer, slightly beat off all the pieces. Due to this, the liver will quickly fry, and will be soft and juicy.
- We heat the pan with two tablespoons of vegetable oil. We roll each piece of liver on all sides in flour and spread it in heated oil. Fry over medium heat on each side for one minute.
- We put the finished liver on a plate. We send pieces of the liver back to the pan, shifting it with layers of fried onions.
- When all layers are formed, sprinkle with salt and pepper to taste. At this stage, you can add any spices and seasonings to your taste.
- Pour 50 - 100 ml of cold water, put the pan on the stove, cover it with a lid, bring to a boil and simmer over medium heat for 5 - 7 minutes. At the end, you can sprinkle the dish with any chopped herbs. You can also add a pinch of nutmeg, this spice goes well with the liver and gives it a special piquancy.
- Liver with onions will perfectly complement any side dish, for example, mashed potatoes, pasta, cereals.
