Step cooking
- We cut one large onion into small cubes. The method of chopping onions does not play a significant role, it will form gravy for the liver. Therefore, it can be cut into half rings, rings, or any pieces that you like best.
- Heat the pan over medium heat, add 2 tablespoons of vegetable oil to it. It is better to use refined oil, as it has no odors and is better at frying. On a frying pan heated with oil, put the chopped onion. Fry over medium heat until onion is a little brownish.
- Cut the beef liver (500 grams) into small pieces. When cutting the liver, it is better not to grind, but also not to make the pieces too large, otherwise they will be poorly fried and will be rough. The thickness of each piece should be no more than 2 cm. To the browned onion, spread the chopped beef liver, mix it with the onion and leave it to fry for several minutes. It is necessary that the liver is evenly cooked on all sides and changes its color (about 7-10 minutes).
- The liver needs to be salted and pepper to taste. Spicy herbs or spices can be added as desired.
- After a while, when the liver acquires a golden hue and is well prepared on all sides, add 3 tablespoons of sour cream to it. Mix everything with a spoon so that sour cream covers each piece. Stew everything under a closed lid for 15-20 minutes. It is best to choose homemade fatty sour cream, since it is such a product that is most suitable for gravy to the liver in a Stroganov style.
- We serve the finished dish to the table with any side dish.
Options for serving and supplementing dishes
The classic Stroganoff liver recipe will not get worse from various supplements that will help diversify this dish. Such a liver can be served with almost any side dish, combined with vegetable salads.
- Together with sour cream, add a little chopped onion (one bunch) to the fried liver. This will give the dish a special freshness and piquant taste.
- Before cooking the liver, add a few mushrooms to the onion in the pan. They go well with sour cream, and will make the dish rather unusual.
- It is most delicious to combine Stroganov’s liver with delicate mashed potatoes. It is boiled potatoes that will convey the delicate taste and aroma of beef liver.
- Instead of sour cream, fatty milk cream can also be used. They will give the beef liver a creamy taste and make it softer.
