Step cooking
- We start cooking with the preparation of beef liver. 500 g of the liver should be thoroughly washed and cleaned of films. In order for the liver to be soft and soft, it must be soaked in milk for an hour. Then cut the liver into small pieces.
- Sliced slices of the liver are placed in a dish that is convenient for you. Salt and pepper to taste, mix.
- Next, sprinkle the liver with 1.5 tbsp. l starch, it can be corn or potato starch. Mix well so that each piece is boned in starch.
- Getting to frying the liver. To do this, put the pan on a strong fire, add 25 g of butter and 1 tbsp. l odorless vegetable oil.
- In a well-heated oil, spread the pieces of the liver in one layer. Fry it for 2 - 2.5 minutes to fry the liver.
- While the liver is fried, put another pan on the stove, pour 2 tbsp. l odorless vegetable oil. Two onions are cut into a medium-sized cube and spread in hot oil. Stir occasionally, fry the onions until a light golden color.
- When the liver is fried, turn it over to the other side and fry for a few minutes over high heat.
- To the fried liver, shift the finished onion. Add two bay leaves. You can add a pinch of nutmeg, it works very well with the liver.
- Let's make the sauce. To do this, in a small bowl we combine 150 g of sour cream 15 - 20% fat and 3 tbsp. l tomato sauce. If you do not have tomato sauce, then just dilute 1 tbsp. l tomato paste паст a glass of cold water and add to sour cream.
- To the sauce add 1.5 tbsp. l mustard, but it should not be sharp, but Dijon or honey. Mix well.
- Pour the sauce to the liver, mix, bring to a boil and, reducing the heat, simmer for 2 to 3 minutes, then turn off the heat. Be sure to taste it, if necessary, add salt or pepper, focus on your taste.
- At the very end, sprinkle with chopped herbs: parsley, dill and green onions. You can use one type of greenery.
- The liver turns out to be very tender, soft, juicy with a pleasant sauce. Stroganov’s liver goes well with any side dish: pasta, potatoes, any porridge. Enjoy your meal!
