Preparation and processing of liver mass
- Wash 700 grams of chicken liver well. Remove fat and veins. Pass the ingredient through a fine sieve in a meat grinder into a deep bowl. You can take pork or beef liver in the same amount. But from chicken offal it turns out the most delicate dish.
- Add 120 grams of semolina to the ground liver. Stir well.
- Pour into a mass of 120 ml of fresh milk.
- Beat 1 chicken egg, mix the contents of the bowl until smooth.
- Salt and pepper the mass to taste, pour 0.5 teaspoon of dried basil greens. Stir thoroughly.
Vegetable preparation
- Peel and cut into half rings 3 medium-sized onions. Put chopped onion in 50 ml of vegetable oil in a well-heated pan.
- Wash, peel and grate 3 medium carrots on a coarse grater. Pour grated carrots to the onion, mix. Cover the pan, simmer the vegetable mixture (15-20 minutes) until cooked over low heat, stirring occasionally.
- Salt vegetables to taste, add 1 pinch of black pepper and 1 pinch of Provencal herbs. Stir. Other herbs and spices can be added to the composition of the vegetable mixture, for example, dried basil, oregano, saffron, turmeric, chopped fresh dill, parsley.
Assembly and baking
- Cover a rectangular baking dish with a volume of 1.5 liters (size 12 cm × 28 cm) with foil, grease with vegetable oil (20 ml), sprinkle with breadcrumbs (2 tablespoons).
- Put half the vegetable mixture into the mold. Smooth the surface with a spoon or culinary spatula, while slightly thickening the layer of onions and carrots. Before laying vegetables do not need to be cooled.
- Pour half the liver mixture into the mold. Sprinkle it with 150 grams of coarsely grated cheese. Gently lay the other half of the vegetables over the liver mass. Carefully level the surface.
- Bake at 180 ° C for about 1 hour 10 minutes - 1 hour 20 minutes.
- The finished dish can be sprinkled with chopped greens of dill, parsley, green onions.
