Step cooking
- Cut a pre-washed tomato in half, grate it on a coarse grater. Put the mashed potatoes in a preheated pan.
- Wash and peel 1 medium carrot. Cut the root crop in half or 4 parts in length, cut into slices about 2-3 mm thick. Carrots can be cut into small cubes or straws, rubbed on a coarse grater.
- Peel 1 large onion. Cut into half rings about 3 mm thick. Any other way of slicing a vegetable is suitable: in small strips, cubes, slices.
- Wash, remove the films, dry with a paper towel or napkin 500 grams of rabbit liver. If the offal with a noticeable smell, it is soaked in cold water or milk for 1-2 hours. It is believed that no harmful substances accumulate in the liver of a young animal up to 6 months of age (weight up to 2 kg), and it is an environmentally friendly product. Cut the liver into large pieces. You can cut the product into slices or slices of medium size (at your discretion). Put the offal slices in a pan to the tomato puree.
- Pour in 60 ml of vegetable oil. Cooking oil can be flavored with garlic. To do this, in another pan, fry a couple of cloves of garlic crushed with a knife until golden brown in vegetable oil until golden brown. Remove the garlic from the oil, discard. Use oil for cooking.
- Put chopped onions and carrots in a pan. To give an additional aroma, put a small amount of herbs, seasonings, spices, fresh herbs. These ingredients are not indicated in the recipe.
- Salt and pepper the dish to taste, mix the contents of the pan with a culinary spatula.
- Cover, simmer until tender over low heat. In the dish for tenderness at the end of frying, you can add fresh cream, sour cream, sauce. You can shade the taste of a rabbit liver (it has a specific sweet taste) by adding a small amount of white dry wine to it at the end of cooking.
Served with different side dishes: mashed potatoes, boiled potatoes, pasta, rice, buckwheat, other cereals, cauliflower, steamed vegetables are good. Delicious paste is prepared from fried or stewed rabbit liver with vegetables.
