Step cooking
- Before starting cooking, rinse well with 1 kg of turkey liver under running water and pat dry with paper towels. Remove coarse veins as needed. Then cut the liver into small pieces and place in a deep bowl.
- Peel one medium onion, rinse and cut into small cubes or thin half rings. Pour about 2-3 tbsp into a deep pan. l vegetable oil and lightly warm it. Place chopped onions in a pan and fry it over medium heat until light brown, occasionally stirring with a spatula.
- Peel and wash one medium-sized carrot, then cut into small strips or grate on a coarse grater. Rinse a bunch of dill and chop it with a knife on a cutting board. You can use any other greens as desired.
- Add chopped carrots to the pan with the toasted onions. Sprinkle vegetables with a pinch of salt, mix and fry until carrots are ready, it should be completely soft. In this case, sometimes stir the vegetables with a spatula.
- Sprinkle the chopped liver to taste and mix thoroughly but gently. You can use any suitable spices and herbs - a mixture of peppers, dried oregano, coriander, paprika, etc. Add 100 g of starch to the liver and mix well to make it evenly coated with starch. Optionally, use wheat flour instead of starch.
- Pour about 2-3 tbsp into a separate pan. l vegetable oil and heat it on the stove. Then put the prepared liver in the heated oil and fry it over medium heat until golden brown on all sides, stirring with a spatula for about 4-5 minutes.
- Sprinkle onions with carrots to the fried liver and mix everything well with a spatula. In a pan, add 200 g of sour cream to all the ingredients and mix thoroughly. Pour about 100-120 ml of water into the pan, mix well and salt the liver to taste.
- Add chopped greens to the pan. Mix all the ingredients thoroughly and simmer for about 2-3 minutes. Liver in sour cream sauce is ready.
