Step cooking
- First of all, it is necessary to rinse 500-600 g of beef liver well under running water. Then remove the film that is on both sides of the liver. This is done so that after cooking the liver turns out to be soft. If different tubules or veins come across in the liver, then they also need to be cut with a knife.
- We cut a solid piece of liver into 2 parts, after which we cut each into small pieces about 1 cm thick.
- We put the pan on the stove to heat up at maximum heat. Meanwhile, we are cutting onions. Cut the vegetable first into 2 halves, then into half rings.
- When the pan warms up well, pour 2-3 tbsp. l sunflower oil and reduce the fire, making it medium. Put 100 g of flour in a deep plate and roll each piece of liver well on all sides. If you get too large a layer of flour, then the excess must be shaken off.
- Boneless pieces of liver are laid out in a frying pan, frying first on one side until golden brown, then on the other. On average, it is necessary to fry the liver on each side for 2-3 minutes. We put the finished liver on a plate.
- In a clean frying pan, pour 1-2 tbsp again. l vegetable oil. If you have a lot of liver, then you can prepare it not in a pan, but in a roasting pan. After the oil warms up well, put the onion half rings and fry until golden. You can add a little salt to the onion and stir it with a spatula to prevent it from burning.
- When the onion is well cooked, add the roasted beef liver to the pan. Only at this moment it is necessary to salt the liver, adding 1 tsp. table salt. If you salt the liver during frying or earlier, it will turn out to be tough.
- Season the liver to taste. You can add spices that you like best. Add 180-200 g of sour cream and mix well. Stew the dish under a covered lid for 2-3 minutes over medium heat.
- Beef liver with onions ready. You can serve it to the table with any side dish or fresh vegetables.
