Step cooking
How to fill
- Separate the yolks from the protein of 4 chicken eggs.
Place the yolks in a deep bowl. Add a pinch of black pepper, a little salt with a pinch of salt.
- Stir the yolks well with a fork until smooth. Pour in a bowl 300 ml of cream with a fat content of 20-30%. Stir the contents of the bowl well with a fork or culinary whisk.
- Grate 100 grams of hard cheese on a fine (medium) grater. Add the grated cheese to a bowl with a creamy yolk mass. Mix well.
Cooking spaghetti
- Bring to a boil 2.5 liters of water in a wide pan. Add 25 grams of salt. Instead of table salt, you can use sea salt. Cook on high heat. Place the spaghetti in the pan. Fan them.
- Macaroni itself will dip in boiling water as the bottom is boiled. In the end, help them with a spoon. No lid needed. Cooking time is indicated on the packaging, stick to it. Throw the finished spaghetti into a colander. Rinse them with water is not necessary. Only pasta for cold salads is washed.
Cooking
- Heat the stew pan well. Pour 30-40 ml of olive oil into it. Peel 3 cloves of garlic, cut into slices. Put slices in hot oil. Sauté on low heat.
- Sauté the garlic until golden. Remove the garlic slices from the oil using the cooking tongs. Thinly chop 200 grams of low-fat ham and 150 grams of bacon. Put the meat straws in the pan. Fry bacon and ham until golden brown over high heat, stirring constantly. For cooking pasta, it is better to take not very oily ham.
- Wash, peel and cut into strips 100 grams of champignons. Use mushroom caps for cooking. Legs are not used in this recipe. Put the mushrooms in a saucepan to the meat sticks.
- Stir, fry the mixture until cooked over high heat, stirring occasionally. To the prepared mushrooms and ham bacon, add medium chopped dill greens (2 branches) and chopped basil leaves (4-5 leaves).
- Put spaghetti in a stewpan. Reduce the heat to medium. Stir well with spaghetti with champignons, bacon and ham.
- When the spaghetti has warmed up well, pour the cream cheese filling into the stewpan.
- Mix well. Stew on low heat until cooked. The pasta is ready when the cheese is melted.
Italians call this dish Carbonara pasta with mushrooms. When preparing the sauce, Parmesan cheese, butter is often used to give the fill a delicate flavor, and spicy oregano herb.
