We will prepare all the ingredients on the list and the work surface. This recipe is not a classic arabyat pasta recipe. But this does not prevent the dish from being very tasty and interesting. Let's start cooking arabyata hot sauce. You don’t have to cook, stew or fry it, the main thing is to arm yourself with a blender, since it is necessary to grind all the ingredients.
- Unlike the classic recipe, which uses tomatoes in their own juice, this recipe will need 100 g of sun-dried tomatoes in olive oil. They can be bought or cooked at home. They are stored for a long time and will be useful to you for other dishes. Put tomatoes in a blender bowl.
- Rub one hot red pepper in a mortar into small crumbs. Dry peppers can be replaced with fresh chili peppers. It should be cut and sent to the bowl of the blender to the tomatoes. Pick the sharpness of the sauce to your taste. If you like it sharper, then add more pepper and do not peel the seeds. If you want to feel a touch of piquancy rather than pungency, then peel all the seeds and add just a couple of slices of pepper. But without it you won’t get a real arabyat sauce, but just pasta with tomato sauce.
- Grind sun-dried tomatoes with hot pepper at high speed.
- At this time, we send pasta to boiling salted water and cook according to the instructions on the package. You can use any pasta at all: spaghetti, horns, bows, shells, penne and others. The main thing is that they were from durum wheat.
- Then add 10 - 15 g of extra virgin olive oil and a few tablespoons of water, in which pasta was cooked. Salt to taste. Whip again. Very often capers or chopped green olives are added to this sauce.
- For decoration and aroma, chop finely 2 parsley branches. Basil is also great for this dish.
- We spread the prepared sauce on hot pasta, mix well. We collect the remains of sauce from a blender 2 - 3 tbsp. l water after cooking pasta, so the paste will turn out even more juicy.
- Add chopped parsley and 1 - 2 tbsp. l olive oil, mix. Arrange on plates and serve. You can sprinkle top with parmesan or any other cheese as you wish.
