Step cooking
- 500-700 g turkey liver must be thoroughly washed and cut into small pieces, so it cooks faster, and it will be easier to grind. If you prefer chicken liver, then finely chopped it is not necessary.
- Half a small onion should be peeled, washed and cut into small pieces so that it is convenient to fry them.
- The third part of the carrot also needs to be peeled and cut into arbitrary pieces. If the carrot is not too big, you can take ½ or a whole. It is not necessary to rub the vegetables too finely, since after cooking they will be crushed in mashed potatoes. 3 small cloves of garlic can simply be crushed with a knife, however, if desired, it can be cut or passed through a press.
- When the preparatory work has come to an end, put the pan on the fire and pour vegetable oil into it. When the oil has warmed a little, send chopped onions and carrots to the pan. Also, vegetables should be sent 1 tbsp. l butter. Fry onions with carrots will take about 5 minutes until soft.
- After the vegetables have become soft, you can send them a liver, which will be fried in a pan until cooked. When the liver is almost ready, the ingredients can be salted, pepper and add nutmeg.
- Next, pour 250 ml of cream of 20% fat and leave the liver with cream to stew without a lid for 10 minutes. After 10 minutes, you can add garlic to the liver with vegetables and cream, and remove the pan from the heat.
- All the ingredients need to be poured into a deep bowl or in a special jug for a blender, add 2-3 tbsp. l butter and begin to interrupt the paste with a hand blender until smooth.
- Pour paste into a convenient container, melt 1 tbsp. l butter and fill it with liver pate, then cool and put in the refrigerator to solidify. When the butter hardens a little in the refrigerator, the paste can be taken out and spread on bread, or mixed with some kind of side dish.
