- Add 1 tsp. salt. Sprinkle with black pepper to taste.
- Spread 50 g of butter. Add 100 g of sour cream.
- We again thoroughly interrupt the blender. The paste is slightly liquid after whipping. We put in the refrigerator at night for freezing.
Serve to the table in cold or chilled form.
Useful Tips
- The liver should always be checked for bile residues, because after cooking it will be bitter.
- Before grinding into a paste, the liver is first fried or boiled.
- The liver loves fat. When frying, it is better to add butter to the vegetable oil or put pieces of bacon. In the paste, this fat will not be felt.
- It is better to grind vegetables with a liver in a blender or in a meat grinder in a cold form.
- No need to lay eggs.
- Paste goes well with acidic foods, such as pickled cucumbers.
- To improve the taste and greater aroma, wine or cognac is added. It is better to use red wine, it harmonizes better with the liver.
- If desired, add a variety of spices: a mixture of peppers, a mixture of vegetables, chopped nutmeg, coriander.
- To make the plow soft and tender, without pieces, it should be wiped through a sieve.
- Serve on the table better on tartlets, slices of brown bread or toast.
