Step cooking
Preparatory stage
- We clear one onion of the husk and cut into half rings.
- We clean one large carrot, wash it and cut into medium sized straws. To do this, first cut the carrots into plates, then gently cut into strips. If you have a food processor with a special nozzle, this will greatly facilitate the work.
- Wash one bell pepper, cut in half, peel from seeds and cut into cubes.
- I wash one young medium-sized zucchini, peel it and cut into large pieces. If the seeds at the zucchini are large, they should be removed.
- Five tomatoes of mine, remove the core and cut into cubes.
- We clean and wash one kilogram of potatoes. Each potato is cut into 6-8 parts. If the potatoes are small, you can also 4.
The main stages of cooking stew
- Pour 30 g of vegetable oil into a stainless steel pan with a thick bottom and heat it.
- We spread onion with carrots in oil.
- Fry them for about 2-3 minutes, so that the carrots soften, and the onion becomes golden. Then add the tomatoes and mix with a spatula.
- Salt, add a pinch of hot red pepper and 1 tsp. ground coriander. Bring a glass of water to a boil in a separate saucepan. Pour the vegetable mixture with hot water and mix well.
- Add pepper, potatoes and zucchini. Add 200 g of frozen corn.
- Close the stew with a lid and cook over low heat for about 0.5 hours.
- When the potatoes are soft, the stew is done. Stir it and serve hot.
Important!If you do not have a stainless pan with a thick bottom, then the stage of frying carrots and onions is best done in an ordinary frying pan. And then put the fried vegetables in a pan and continue to stew there.
