Step cooking
- First, measure out the right amount of bran. Wheat bran is a very healthy product. Unlike regular flour, all micronutrients and fiber are not “taken” in it. The color of the bran is not white at all, rather, grayish. Only fresh bran should be selected. Wheat bran can be replaced with oat bran.
- We take a glass of whey, pour into a saucepan and heat it to a hot state, but so that it does not boil. If there is a kitchen thermometer, then up to 70 °. If not, then we simply focus on the moment when a light smoke begins to form above the surface. In a deep bowl, first pour the bran, and then fill them with hot whey. By the way, if suddenly there is no whey, then you can replace it with ordinary water (the taste of bread will change slightly).
- Mix the ingredients well. We cover the bowl with a towel and leave the bran to swell for two hours.
- After the set time, turn on the oven at 180 ° C. Add one egg to the resulting bran and whey mass and knead thoroughly so that both the yolk and the protein mix well. Now it’s the turn of dry ingredients - salt and soda. Both that, and another are necessary at a rate of 1 teaspoon. Add and mix.
- Pour the peeled sunflower seeds (colloquially “boobka”) into the resulting mass and mix again.
- Last of all, add the sifted buckwheat flour. By the way, if you didn’t succeed in buying buckwheat flour, you can grind it yourself in a coffee grinder, if any, and sift it a couple of times through a sieve.
- Time to knead the dough. It is mixed very simply, without effort. If all the ingredients stick together - that's it, the dough is done! We give the test any desired shape - a brick, a circle, a bar, etc.
- On a baking sheet stele parchment paper and put on it our loaf of bread. Sprinkle with a tablespoon of sesame seeds (seeds). This is an excellent tool that helps cleanse the body, that is, it does not hurt in this healthy bread.
- Put the pan in the oven for 30 minutes. That's all! The bread is ready! We will wait until it cools down a bit, and we will try! Enjoy your meal!
