Step cooking
Cooking dough
- Cut the butter into large squares. Please note that it should be very cold, literally right from the refrigerator. Sift flour, starch into a separate bowl, add salt, baking powder, powdered sugar and mix well so that all ingredients are evenly distributed over the volume.
- We spread the chopped butter, stir and grind into not very small crumbs.
- We make a recess in the center and break one whole egg there. We divide the second egg and add only the yolk to the dough. We leave the protein for the curd mass. Mix everything and knead a homogeneous dough.
- Wrap the dough in a film and put it in the refrigerator for 1 hour. After the necessary time, we take out the dough and divide it into two parts, one of which will be slightly larger than the other.
- We roll out most of it and put it inside the mold, cut off the rest to the size of the bottom.
- We roll the smaller part into rollers and line the walls of the mold. We align the walls and the bottom so that there is a minimum of relief. We put the finished form for 20 minutes in the freezer and at this time we prepare the curd filling.
Cooking curd filling
- Sift the flour into the container, add 120 g of sugar (until the remaining 60 g, put aside), vanilla sugar and stir.
- Pour milk and mix until smooth. It should not be thick.
- Knead the cottage cheese, add the zest of lemon and lemon juice to taste to it.
- We divide the chicken eggs into proteins and yolks, pour the proteins into a separate bowl, and add the yolks to the cottage cheese and knead until smooth.
- Add the dough prepared earlier, stir. Pour the remaining protein from the dough to the separated proteins, add salt and beat until soft peaks. Gradually add the remaining sugar and beat until stable peaks. Pour cold cream into a separate (preferably cold) container and whip. Alternately, we interfere with whipping proteins and whipped cream with folding movements in the curd mass.
We make a pie
- We take from the freezer a mold from the dough. Pour the curd filling into the mold.
- We put the bake in the oven preheated to 170 degrees Celsius for 50-60 minutes (until a golden crust appears). Readiness is determined by lightly pressing the middle of the cake: if the finger does not fail, the cake is ready. Put the finished cake in the form on the wire rack and let it cool completely.
- We take it out of the form, put it on a serving plate and invite the family to treat themselves!
