Ingredients
- pork loin - 500-700 g
- onions - 1 pc.
- garlic - 2 cloves
- vegetable oil - for frying
- butter - 100 g
- Parmesan - 80-100 g
- breadcrumbs - 500-600 g
- egg - 2 pcs.
- milk - 70 ml
- flour - 2-3 tbsp. l
- salt to taste
- steamed rice - 200 g
- vermicelli - 250 g
- beef broth - 100 ml
- mustard - 2 tbsp. l

Step cooking
- Before you start cooking chops, you can prepare a side dish for them in advance. To do this, you need to rinse 200 g of steamed rice and place it in a pan, slightly salted. Immediately pour rice with water is not necessary. Fine vermicelli must be fried in a pan. Pour enough odorless vegetable oil so that it almost completely covers the vermicelli and heat it well. Pour vermicelli into boiling oil and fry until brown, stirring constantly.
- Throw the fried vermicelli into a colander so that all the butter from it is glass, and then add it to the rice pan. Pour rice with vermicelli with water so that it covers the ingredients a little and leave to cook under the lid until the rice is ready.
- Next, you need to prepare onions and garlic, with which you will grease the chops. To do this, 1 onion and 2 cloves of garlic must be peeled and grated.
- Take 500-700 g of pork loin, cut into portions and beat the meat with a special hammer through a cling film. So that the chop does not stick to the board, the board can be slightly moistened with water.
- Smear the first chop on both sides with a mixture of grated onion and garlic, salt a little and put on a plate. Lubricate the remaining pieces of meat and salt on one side only, laying the chops on top of each other.
- Leave the meat to brew for 20-30 minutes.
- Next, grate 80-100 g of Parmesan on a fine grater, sprinkle a little raw chop on both sides with it and beat the cheese with patting movements.
- Now you can start brewing chops. Pour 70 ml of milk into a deep bowl, beat 2 eggs and slightly salt the ingredients.
- At the end, add 2 tbsp. l flour and mix the mixture with a whisk.
- Put a frying pan on the fire and heat it, put 100 g of butter in a pan and melt it, then pour 30 ml of melted butter into a cup (it will be needed a little later).
- Add the vegetable oil to the remaining oil in the pan and fry the chops until golden brown. For this, the chop needs to be immersed in batter, and then roll in breadcrumbs.
- then put the chops in the pan and fry on both sides.
- After you have fried the chops, pour all the oil from the pan, pour 30 ml of melted butter into it, add 1 pinch of flour, 100 ml of beef broth and 2 tbsp. l mustard, mix all the ingredients thoroughly and wait until the sauce thickens.
- Ready sauce can be poured into a bowl and served on a large plate along with a side dish and chops.
