Step cooking
- Before cooking, 500 g of beef liver should be thoroughly rinsed under running water and remove the film. If this is not done, then the chops will come out very tough. With a fresh liver, such a film is removed without any problems.
- We cut the prepared liver into pieces of medium size about 1 cm thick. If you cut the liver into too small pieces, then during frying the chops will greatly decrease and can be stiff. We beat off each piece of the liver with a hammer or tender, so that its structure becomes softer. We shift the liver to a flat plate. Sprinkle with spices to your liking. Wrap the liver in a plastic wrap and put in the refrigerator for a few minutes.
- Heat the pan with vegetable oil. The latter will need about 2-3 tbsp. l While the frying pan is warming up, we prepare the breading. To do this, break 2 chicken eggs into a deep bowl and add salt to taste. If desired, spices can be added to the egg to taste. Stir the eggs well with salt with a fork or whisk.
- In a separate bowl, put about 100 g of flour and proceed to frying the liver chops. First we roll each piece of the liver thoroughly in flour, shaking off the excess, then dip it in the egg and put it on a heated frying pan.
- Fry chops from the liver on each side for 2-3 minutes. Cooking chops is better on medium or low heat. If the liver is a little damp inside, then it’s okay, it’s important to eat such chops immediately and not to store them for a long time. If you still want to get a fried liver, then cover the pan with a lid.
- Put the fried chops on a plate covered with paper towels. Thus, it will be possible to remove excess fat. To make the chops more tender, put a slice of butter on top of each piece. In total, approximately 30-50 g of product will be required.
- If you do not like a liver that is not fully cooked, you can finish it in the oven. To do this, transfer the fried chops to a baking dish and put in an oven preheated to 180 degrees. Beef chops are baked for 10-15 minutes. After 10-15 minutes, beef liver chops are completely ready. They turn out to be tougher than after frying in a pan, while all the same juicy and tasty. You can serve such chops with any side dish that you prefer.
