Step cooking
Cooking dough
- We take a pan with a thick bottom, pour 200 ml of warm water there, add 10 g of salt and sugar, mix, add 1 bag of dried yeast, 30 ml of vegetable oil, mix. To make the dough rise, the yeast starts its reaction, water must be taken warm, not hot.
- Sift 350 g of flour, add it in small portions, stirring the dough with a whisk. The amount of flour can be different for everyone, it depends on the moisture content of the flour, so adjust it yourself.
- Now knead the dough. Sprinkle the working surface with flour, spread the resulting mass and knead with hands.
- Sprinkle the bottom of a deep bowl with flour, send the finished dough there, cover with a lid or cling film, leave in a warm place to fit.
Cooking stuffing
- For the filling, we need 400 g of minced meat. You can make it yourself or buy it ready. Homemade ground beef from fresh tenderloin will be the best.
- We send the minced meat to a deep bowl, add 5 g of salt, 2-3 pinches of ground black or a mixture of peppers to it.
- We wash a bunch of cilantro with running water, let it dry, cut it finely, and send it to the minced meat. If you wish, you can replace it with any other greens, but the traditional Ossetian pie is made with cilantro.
- We clean the onion, rinse it, cut into small cubes, send it to the filling.
- We peel 2-3 cloves of garlic, rinse it, pass through the garlic, or chop it very finely and send to the filling.
- Mix the filling with your hands to make the mass uniform. For juiciness, add 50-100 g of water.
Bake a pie
- After the dough has come up, we divide it in two equal parts, roll it on a work surface, sprinkled with flour.
- We cover the baking sheet with parchment paper, put on it a rolled layer of dough. We put the filling on top, we disband it evenly according to the test with the help of the hands, leaving the edges free by 2-2.5 centimeters.
- We roll out the second layer of dough the same size as the first. Then we fold it four times and make small notches along the edges with a knife. How to do it right, look at the photo.
- We cover the blank with this layer, glue the ends of the upper and lower layers. Let's do it in the form of a beautiful pigtail pattern.
- We send the cake to the oven, heated to 250 degrees, for 10-12 minutes. After this time, we take out the cake, rub its surface with a small piece of butter. After cooling, we can serve to the table for guests or family.
